
Depending on the grade, Beluga may range in colour from pale grey to almost black. Its berries, or grains, are the largest of the three main types of sturgeon. Grade 000 beluga (sometimes called prime) is light to dark and the most expensive of the "regular" caviars (some importers occasionally offer rare specialty belugas); grade 00 beluga is darker and slightly smaller. Some caviar merchants sell "broken-grain" beluga at perhaps half the cost of the grade 00. These berries, generally from sturgeon caught late in the season, can be flavourful and quite bargain, but they are soft and do not have the delicious "bite" of the whole grains.
