The smaller grey to gray-black sevruga eggs are the least expensive of the three main types (Beluga, Golden or Imperial and Osetra); some people prefer their saltier, somewhat more intense flavour. In general, caviar is best served chilled, if you do want to add sturgeon caviar to a cooked dish, sevruga's grains stand up the best to heat.
